It could be Knuckles turn to shine.
Thus far, three classic 'Sonic' titles, including 'Sonic the Hedgehog,' 'Sonic the Hedgehog 2,' and 'Sonic CD,' have been treated to the remastering process. As most fans would suspect, the missing components are 'Sonic 3' and 'Sonic & Knuckles.' While emulated versions of those classics have been released as 'Sonic 3 & Knuckles,' many fans are still waiting for the remastered version and its new features.
It turns out that the team of Christian Whitehead and Simon Thomley, who produced the three remastered 'Sonic' games, have already begun work on 'Sonic the Hedgehog 3.' What that means is, the major thing needed in order to see the release of a remastered 'Sonic 3 & Knuckles' is a showing of fan interest. The more fans that let SEGA know, the better. (Options to let SEGA know can be found here.)
Of course, the previous remastered 'Sonic' titles have featured enhanced graphics, music, multiplayer, achievements, new content and more, but they have also only been released on Android and iOS. The remastered 'Sonic 3 & Knuckles' would likely also only be for mobile platforms, at least at first. The key here is to get the game finished and released (especially since, the developers want to add and expand a few areas), and then to push for a release on the PC and console platforms.
